Lemon Dill Rice is a delicious and comforting vegetarian and vegan side dish perfect for Persian dinner parties. Fluffy basmati rice is delicately flavored with dill, lemon zest, and saffron, offering a fragrant and pleasing accompaniment to kebabs, grilled seafood, or fresh salads.

  • Basmati Rice3 cups
  • Water5 cups
  • Olive Oil2 tbsp
  • Kosher Saltto taste
  • Canola Oil2 tbsp
  • Minced Garlic2 tsp
  • Fresh Dill, chopped4 cups
  • Saffron, steeped in hot waterPinch in 4 tbsp hot water
  • Lemon Zest1 tsp
  1. Rinse the rice a few times until the water runs clear then place it in a large pot.
  2. Add in the salt, olive oil, and water. Place the pot over medium heat and bring it to a boil.
  3. Turn off the heat, cover with a lid, and let it steam for 6-8 minutes until cooked through.
  4. Meanwhile, in a skillet over medium heat, add canola oil and minced garlic. Stir the garlic until slightly browned and fragrant, about 1 minute.
  5. Add the chopped dill to the garlic and stir until wilted, approximately 1 minute.
  6. Add the garlic and dill mixture to the rice and stir until combined.
  7. Transfer the dill rice to a serving bowl.
  8. Drizzle with saffron water and sprinkle with lemon zest before serving.
