These cozy Apple Pie Overnight Oats, filled with apples, cinnamon, maple syrup, oats, and walnuts, taste just like apple pie. They are a delicious and healthy way to start your day, providing 10 grams of fiber and lasting satisfaction.

  • For the apples
  • Medium apple, chopped1
  • Ground cinnamon1 teaspoon
  • Pure maple syrup, or sugar-free maple syrup1 tablespoon
  • Sea salt
  • For the oats
  • Unsweetened almond milk, or milk of your choice1 ½ cups
  • Chia seeds2 teaspoons
  • Vanilla extract1 teaspoon
  • Ground cinnamon1 teaspoon
  • Ground nutmeg1/8 teaspoon
  • Pure maple syrup, or sugar-free maple syrup½ tablespoon
  • Old fashioned oats, or gluten-free oats1 cup
  • Chopped walnuts, for topping2 tablespoons
  1. For the apples
  2. Add the apples, cinnamon, maple syrup, and a pinch of sea salt to a small saucepan over low heat.
  3. Mix to combine, then cover and cook for about 10 minutes, stirring occasionally, until the apples are tender.
  4. Remove the lid, increase the heat to medium, and cook for an additional 2-3 minutes, or until the sauce thickens slightly and coats the apples, with excess liquid evaporating.
  5. Remove from the heat and set aside while you make the oats.
  6. For the oats
  7. In a small bowl, add the milk, chia seeds, vanilla, cinnamon, nutmeg, and maple syrup.
  8. Add the oats and mix to combine.
  9. Add 1/4 of the oat mixture to each of 2 mason jars (8oz) or airtight containers.
  10. Layer each evenly with ¼ of the apples, then top each with an equal amount of the remaining oats and 1 tablespoon walnuts.
  11. Cover and refrigerate overnight. Oats may be eaten cold, at room temperature, or warm.
