  • 1 whole country chicken, cut into pieces
  • 2 liters of tucupi
  • 2 bunches of jambu (or spinach as a substitute)
  • 4 cloves of garlic, crushed
  • 1 large onion, chopped
  • 2 bay leaves
  • Chicory to taste
  • Cheiro pepper to taste (or dedo-de-moça pepper)
  • Salt to taste
  • Juice of 1 lemon
  1. Start by thoroughly washing the chicken and seasoning it with salt and lemon juice. Let it marinate for about 30 minutes.
  2. In a large pot, heat a little oil and brown the garlic and onion.
  3. Add the chicken pieces and fry until they are golden on all sides.
  4. Pour the tucupi into the pot, add the bay leaves, and let it cook over medium heat for about 1 hour and 30 minutes, until the chicken is tender.
  5. Meanwhile, wash the jambu well and separate the leaves from the stems.
  6. When the chicken is almost ready, add the jambu, chicory, and cheiro pepper to the pot.
  7. Cook for another 15-20 minutes, until the jambu is tender.
  8. Taste and adjust the salt if necessary.
  9. Serve hot, preferably accompanied by white rice and farinha d’água.
