- 1 whole country chicken, cut into pieces
- 2 liters of tucupi
- 2 bunches of jambu (or spinach as a substitute)
- 4 cloves of garlic, crushed
- 1 large onion, chopped
- 2 bay leaves
- Chicory to taste
- Cheiro pepper to taste (or dedo-de-moça pepper)
- Salt to taste
- Juice of 1 lemon
- Start by thoroughly washing the chicken and seasoning it with salt and lemon juice. Let it marinate for about 30 minutes.
- In a large pot, heat a little oil and brown the garlic and onion.
- Add the chicken pieces and fry until they are golden on all sides.
- Pour the tucupi into the pot, add the bay leaves, and let it cook over medium heat for about 1 hour and 30 minutes, until the chicken is tender.
- Meanwhile, wash the jambu well and separate the leaves from the stems.
- When the chicken is almost ready, add the jambu, chicory, and cheiro pepper to the pot.
