Brazilian Cheese Bread, known as "Pão de Queijo", is a beloved snack in Brazil that’s famous for its chewy texture and irresistible cheesy flavor. This gluten-free cheese bread is a simple yet delicious delight that’s easy to make and impossible to resist!

  • Polvilho Azedo (sour Tapioca starch)250 g
  • Polvilho Doce (regular Tapioca starch)250 g
  • Salt1 teaspoon
  • Melted Butter (or 100ml vegetable oil)100 g
  • Milk1 cup
  • Shredded Cheese (mix of different cheeses such as mozzarella, gouda, cheddar, parmesan)300 g
  • Eggs2
  1. Preheat the oven to 390°F (200°C).
  2. In a large bowl, mix dry ingredients: tapioca starch and salt thoroughly.
  3. Warm the milk and melt the butter; ensure the milk is hot and butter is melted. If using oil, only warm the milk.
  4. Add the liquid mixture (milk + butter/oil) to the dry ingredients. Mix well, starting with a spoon and then switch to hands.
  5. Add all the cheese and eggs to the mixture. Mix everything well with your hands.
  6. Prepare a baking tray by adding baking paper or greasing it with oil and flour to prevent sticking.
  7. Form small balls of dough of similar size, leaving space between each.
  8. Bake for approximately 10-12 minutes until ready.
