  • Red Wine Vinegar

  1. Reverse Searing the Steak
  2. Once hot, place the steaks onto the grill. Turn the heat down to medium-high.
  3. Sear for 2-3 minutes, then give the steaks a quarter turn to form a brown crust.
  4. Cook for another 2-3 minutes, then flip them.
  5. Repeat the searing process, quarter-turning the steaks and cooking for 2-3 minutes until both sides have a crust.
  6. Transfer the steaks to the indirect heat side where burners are turned off.
  7. Close the lid and cook until the steaks reach an internal temperature of 135 degrees.
  8. Remove from the grill and let rest for about 10 minutes.
  9. Slice the steaks against the grain for optimal tenderness.
  10. Chimichurri Sauce
  11. Mince the cilantro, parsley, oregano, garlic cloves, shallots, and red jalapeño.
  12. Mix together and add red wine vinegar and olive oil.
  13. Mix the sauce and add on top of the steaks.
