- New York Strip Steak2

- Red Wine Vinegar
- Cilantrominced
- Parsleyminced
- Oreganominced
- Shallotminced
- Red Jalapeño1, minced

- Reverse Searing the Steak
- Once hot, place the steaks onto the grill. Turn the heat down to medium-high.
- Sear for 2-3 minutes, then give the steaks a quarter turn to form a brown crust.
- Cook for another 2-3 minutes, then flip them.
- Repeat the searing process, quarter-turning the steaks and cooking for 2-3 minutes until both sides have a crust.
- Transfer the steaks to the indirect heat side where burners are turned off.
- Close the lid and cook until the steaks reach an internal temperature of 135 degrees.
- Remove from the grill and let rest for about 10 minutes.
- Slice the steaks against the grain for optimal tenderness.
- Chimichurri Sauce
- Mince the cilantro, parsley, oregano, garlic cloves, shallots, and red jalapeño.
- Mix together and add red wine vinegar and olive oil.
- Mix the sauce and add on top of the steaks.
